Our Story
Meet Malcolm,
Our Chef & CEO.
Malcolm started his journey in the kitchen at sixteen, gaining hands-on experience in hotels and restaurants – from old-school cuisine through to the modern. Through all those years he learned that the key to success is to always remember the basic cooking methods and to make use of fresh, local produce.
In 2004 Malcolm joined Capistrano Restaurant in the heart of Valletta – the highlight of his career and the beginning of his success running a business. It was there he met his future wife, Sherrie Galea. Together they built Capistrano and achieved several awards.
Now at Galea’s Kitchen, they bring that same experience in a more relaxed way. Malcolm works both in the kitchen and front of house – he loves nothing more than chatting with his guests. A family-run business, proving it’s possible to build a career in catering and raise a family at the same time, with a vision that one day their children will continue in their footsteps.
