Our Story
Meet Malcolm,
Our Chef & CEO.
Malcolm started his journey in the kitchen at sixteen, working hands-on in hotels and restaurants from old-school cuisine through to the modern. Through all those years, one lesson stuck: always remember the basic cooking methods, and make use of fresh, local produce.
In 2004 he joined Capistrano Restaurant in the heart of Valletta – the highlight of his career, and where he met his future wife, Sherrie Galea. Together they built Capistrano and achieved several awards.
Now at Galea’s Kitchen, they offer that same experience in a more relaxed way. Malcolm works both in the kitchen and front of house – he loves nothing more than chatting with his customers – and the family’s vision is for their children to continue in their footsteps.
